- Picar las cebollas en juliana y poner a pochar en Aceite de oliva
- Limpiar picar los pimientos en juliana y añadir a fuego lento y dejar que se vayan pochando con la cebolla,
- Mientras se van pochando, voy añadiendo los ajos picados, las especias y el vino y removiendo hasta que ven bien pochados
- Añado un bote de tomate triturado o rallado (yo utilicé passata de la marca Mutti, pero también se puede rallar tomate natural maduro) y voy removiendo hasta que va reduciendo y queda una pasta homogénea.
- A fuego lento pruebo de sabor y removiendo voy rectificando con las especias, y a mí que me gusta un poquito picante añado cayena o guindilla
- Caliento el horno a 180 en la parte superior
- Hay gente que le añade taquitos de queso mozzarella, o scamorza y los mezcla bien
- Se rompen los huevos encima de la mezcla y lo meto al horno hasta que veo que los huevos están bien hechos
- Lo retiro y decoro con hojas de cilantro
- Acompañado con un buen pan crujiente está de lujo!
