- 150-200 ml AOV (Aceite de Oliva Virgen)
- 80 ml vino moscatel
- 80 ml vino joven

- 1/2 vaso zumo de naranja
- Ralladura de una naranja
- Peladura de una naranja
- 1 Cda. Colmada de sésamo blanco
- 1 Cda. Colmada de matalahúga
- 1 anís estrellado
- 1 pzc. Sal
- Cabello de ángel o 1 batata grande
- Azúcar para rebozar
Instructions to make to make Borrachuelos malagueños
- Calentamos aceite en una sartén. Confitamos (freír a muy baja potencia) la matalahúga, el sésamo y el anís estrellado. Dejamos atemperar.
- Tamizamos la harina en un cuenco grande. Retiramos el anís estrellado del aceite y este lo añadimos junto a la ralladura y el zumo de naranja, la sal, el azúcar, los vinos y el anís seco a la harina. Integramos todos los ingredientes. Boleamos (hacemos una bola), tapamos con un paño y dejamos reposar 30 minutos para que se asiente la masa.
- En caso de rellenarlos de batata es tan simple como cocer una patata en agua, quitarle la piel, machacar igual que si hiciéramos puré de patata, mezclarlo con un poco de azúcar y un poco de canela molida.
- Formamos bolitas de masa (del mismo peso) y las aplanamos con el rodillo. Rellenamos de cabello de ángel (o crema de batata) y cerramos como si de una empanadilla se tratase.
- Calentamos aceite en una sartén. Freímos la peladura de naranja y la retiramos. Freímos los borrachuelos en ese mismo aceite (incluso mientras se fríe la naranja, retirándola sin que se queme) con cuidado de que no se nos quemen.
- Mezclamos una disolución de anís dulce con agua en un vaso (⅖ anís ⅗ agua). Cada borrachuelo, ya frito, lo mojamos en esta disolución y lo rebozamos en azúcar (y si queremos también con canela, incluso se pueden bañar en miel).
