  22. 4 hojas Albahaca
  23. 4 hojas perejil
  24. 1 cuchara sopera vinagre
  25. Sal al gusto
  26. Un chorro zumo de limón
  27. 1 pulgar jengibre

  1. Preparar el "Alioli De verano"

    El Alioli lo colocaremos encima de los fideos una vez hayamos terminado de elaborar la fideuá.

    Incorporamos todos los ingredientes del alioli en la batidora y batimos hasta obtener la consistencia deseada. Dejamos reposar en la nevera.
  2. Sofreír las verduras cortadas (Cebolla, calabacín, berenjena y pimiento) a dados pequeños durante unos 7 minutos a fuego lento. Es importante hacerlo a fuego lento para que dejen todo su sabor en el aceite de oliva.
  3. Añadimos el tomate pelado y batido junto con el pimentón de La Vera. Sofreímos durante unos tres minutos hasta que el tomate coja un color más rojizo. Ojo!! Los tomates de Hamsa de por sí ya tienen un color rojizo que da miedo...
  4. Añadimos el litro de agua y dejamos hervir hasta que reduzca a la mitad. Importante!! Al dejar el agua reducir a la mitad, estaremos trasformando el agua en un maravilloso caldo de verduras. Cuando los fideos hiervan absorberán todo el sabor del caldo.
  5. Añadimos los fideos y dejamos hervir durante unos 4 minutos hasta que el caldo se consuma. Siempre que los fideos sean finos (Del número 1).
  6. Dejamos reposar durante 10 minutos y añadimos nuestro "Alioli de Verano" al gusto.
