  1. Aquí tengo 1 kilo de calabaza ya limpia, sin piel y sin semillas cortada en trozos medianos. Pasamos la calaba a una fuente apta para horno. Ponemos en esa misma fuente dos cebolletas y unos 3 dientes de ajo, no hace falta pelarlos. Le añadimos un chorrito de aceite por encima y lo metemos al horno previamente precalentado a 200º centígrados durante unos 30 minutos.
  2. Después, lo sacamos del horno y dejamos que se atempere. Después cogemos los ajos y nos deshacemos de la piel y el ajo lo añadimos a una cazuela, trocearemos las cebolletas y las incorporaremos a la cazuela, y por supuesto, añadimos la calabaza asada a la cazuela. Ahora añadimos el caldo vegetal hasta que cubra más o menos la calabaza, le ponemos sal al gusto y le ponemos una cucharadita de curry. Le ponemos la tapa a la cazuela y dejamos se cueza durante unos 20 minutos más o menos.
  3. Pasado ese tiempo, procedemos a triturarlo. Y ya solamente queda servirla en unos recipientes y disfrutarla!!
